Bakery Pillow Boxes
Bakery packaging has to solve two problems that most product packaging never encounters: fat migrating out of the product into the board, and moisture moving in either direction. A butter-rich cookie will show a translucent halo on plain board within hours, and a pastry sealed in an unventilated box goes soft.
Neither problem is difficult once it is named. Grease resistance comes from a coating or a liner; moisture is managed with ventilation rather than a barrier. What matters is telling us which of the two applies to your product, because the answers pull in opposite directions.
- Grease-resistant coatings and greaseproof liner options
- Ventilation apertures for products that must not sweat
- Window options for counter and grab-and-go display
- Sizes for single items through to six-piece selections
- Board and coating specified to your contact requirement

Grease or moisture — they need opposite answers
Most bakery packaging failures come from solving the wrong one of these.
High-fat products
- Cookies, shortbread, brownies, pastry
- Fat migrates and stains plain board
- Needs a grease-resistant coating or a liner
- A barrier is helpful here
Products that must stay crisp
- Choux, filo, meringue, crusty items
- Trapped moisture softens them quickly
- Needs ventilation, not a barrier
- A sealed box makes it worse
Contact with the board
Where an unwrapped baked item sits directly against the packaging, that is a food-contact application and the board and coating have to be specified for it. Tell us that at quote stage and we will quote the appropriate materials for your market.
Where the item is wrapped, bagged or in a paper case first, the box is a secondary pack and the specification is simpler and cheaper. Many bakeries assume they need the higher specification when they do not, and a few assume the opposite. It is worth being explicit either way.
Practical points for counter service
- A box that folds in under three seconds — staff will not use one that does not
- Flat pack storage, because counter space is always the constraint
- A window, so customers can see what they chose without opening it
- A flat area for a price or allergen label
- A size range that covers one, two and six pieces without a dozen SKUs
Allergen and labeling space
Allergen information requirements for pre-packed food differ across the markets we serve and have tightened in several of them. Whether the copy has to be on the pack, on a label or on a display card is a decision about your product and your market, not about the box.
What we can do is make sure the space exists. Tell us early whether the pack carries the copy or a label, and we will keep a clear, coatable panel for it rather than laminating the whole surface.
- Clear panel for an applied allergen or ingredient label
- Unlaminated area if a label has to adhere reliably
- Space for a use-by date, applied or handwritten
- Reverse panel kept free for regulatory copy
Bakery Pillow Boxes: common questions
Answers to what customers most often ask before ordering this specification.
Will a plain board box stain from a buttery cookie?
Yes, usually within hours. High-fat products need either a grease-resistant coating on the board or a greaseproof liner between product and box.
Why do my pastries go soft in the box?
Trapped moisture. For crisp products the answer is ventilation, not a better barrier — small apertures let moisture escape instead of condensing on the board.
Do I need a food-grade box?
Only if the product touches the board directly. If it is wrapped, bagged or in a case first, the box is a secondary pack. Tell us which applies and we will quote accordingly.
Where does allergen information go?
That depends on your market and how the product is sold. We keep a clear, coatable panel for a label or printed copy — just tell us at the start so we do not laminate over it.
Is a window worth it on a counter bakery box?
For counter and grab-and-go retail it usually helps, because customers want to see what they are buying. Bear in mind a film window reduces the pack's recyclability.
How many sizes do I actually need?
Fewer than most bakeries think. A single, a pair and a six-piece cover the majority of counter sales; more than that creates storage problems for a marginal gain.
Can a bakery box be assembled with one hand at a counter?
A correctly creased pillow box needs two hands but only about three seconds. If speed at the counter is the priority, pre-folding a batch during quiet periods is the usual approach.
Will the box hold a warm product?
Warm and steaming are different things. A cooled item is fine; something still giving off steam will condense inside the pack and soften the board as well as the product.
Can I print a use-by date on the box?
Yes, on a clear coatable panel. A laminated surface will not take most date coders reliably, so leave that area unlaminated.
Do you supply boxes suitable for a display cabinet?
A windowed pack works well in a chilled cabinet, though condensation on the film is worth testing at your own temperatures before committing to a run.
